WHERE

Prahran Market, established in 1864, is one of Melbourne’s premier food destinations and the city’s oldest food market, currently attracting over 70,000 visitors per week. As part of its redevelopment, Market Square—a central courtyard—will be transformed into a vibrant cultural hub featuring weekly events, live music, and big-screen sports broadcasts. The market management envisions curating a selection of top-tier food operators, and Nouns Deli has been invited to play a key role in this transformation.

WHY

We firmly believe relocating to Prahran Market represents a significant step forward for Nouns Deli, unlocking new opportunities for growth, visibility, and community engagement. The redevelopment plans are set to attract over 5 million visitors annually, elevating our visibility and reach to an entirely new level. The council’s commitment to activating Market Square weekly offers us the chance to host our own events, taking over the courtyard for exclusive Nouns activations more frequently and exposing our brand to a broader audience beyond our current impact zone.

HOW

The relocation will be designed to maximize cost-effectiveness by repurposing existing equipment and branding whenever possible, thereby minimizing the need for entirely new infrastructure. It’s worth noting that Nouns Deli operates as a partnership rather than requesting the DAO to purchase the business; this reduces overall costs and limits operational risks for the DAO.

This proposal reflects only a fraction of the cost of building a commercial kitchen from the ground up—estimated at $39,600 USD for partical essential design, installation, logistics, and minor modifications—with Nouns Deli covering the remaining, and likely significant, portion of the budget. We aim to complete the relocation within three months, executing a smooth transition between sites with minimal closure periods.

Appendix – The History of Nouns Deli

Since March 2023, Nouns Deli has served over 50,000 guests, fulfilled 4,800 DoorDash orders, and catered major events, each proudly showcasing the Noggles. The deli has also earned significant recognition, with features in Australia’s largest newspapers and media publications.

Staying true to Proposals 254 and 577, we’ve bridged Web3, CC0 culture, and real-world experiences—minting CC0 recipes, Deli Art Editions, and Better Between Bread episodes, which have collectively achieved 2,000 mints and over 30,000 views. Collaborations with Gremplin, Chimpers, Deadfellaz, and Blockz have broadened our reach, while catering for Coinbase, Pudgy Penguins, BTC Markets, and FireBlocks—to name just a few—has solidified our Web3 presence. We’ve even donned the ⌐◨-◨ in sandwich cook-offs at food conventions.

Through multiple ‘Doing Good’ activations, we’ve raised over $8500 for charity, supporting Ronald McDonald House, FareShare, FoodBank, efforts to combat species extinction, and helping countless individuals and causes in need here in AUS.
